Elisabeth Sarcelet, chef de cave at de Castelnau, employs longer than usual lees ageing in creating this copper-pink wine. It’s a low-key style of pink Champagne that evolves as you sip. It’s seamless and creaming in the mouth. Biscuit and baguette nuances are woven through smooth red fruit characters on nose and palate, towards a lingering, refined finish.
