Rosé Champagne usually has a very subtle pink colour that matches the subtlety of the wine. This dry, mature example from an old house, now affiliated with Bollinger, is refined and complete, with savoury, meaty qualities and lots of bready, yeast-derived richness. It’s a dry, firm wine in the mouth with the depth and structure to pair well with food.
